It may be because prices already factor in things like cashiers and other associates getting paid to do that stuff for you.

I usually do it myself, because I don't wan't anything to get crushed. Almost every time I let the clerk bag the groceries, something soft is smashed. When I load my groceries on the conveyor belt, I put the heavy items on first, so they get bagged together. It's amazing that they can still screw it up.
