I'm in a goofy hybrid type league -- it apparently is 23 years old, so they were making some of this stuff up....
It's a week-to-week rotisserie style league. There are 10 categories, and you get points for each week based on how you rank. There are ten teams in the league, so the weekly winner usually has about 72 pts or so. Then next week is its own rotisserie -- so your 72 points from the previous week go into the bank, and then you put this weeks points into the bank, and so on.
Up to two years ago, they were calculating all of this by hand as well -- I wrote a program that would grab the data from ESPN, but before then, two of the guys were putting in three hours a week manually looking all of this up... they had to do two versions just for error checking.
I think the most honest, least chancy league format is probably a play everybody every week format, or play nobody every week and just go by total points at the end of the year.
