I'll probably lo I into it again. Got a green egg instead that year as my wife is not a huge smoked meat fan unless it's brisket. The kids are getting bigger, we are entertaining more and I like he pork shoulder and smoked poultry of any kind so I'm going to say happy birthday and get one I think. Going to have to get the price list again as, if memory serves me, the price escalates quickly. Kind of want to do a small whole hog on one.

I am curious about how you modified your smoker though


The main thing was the opening between the firebox and cooking chamber. It was too large and the upper portion was too close to the grill grate. That's where the most heat is...science...so I had a plate made to lower the opening 1.5-2" - don't remember how much exactly to get the heat lower.

Then, I added some ceramic plates at that level to further disperse the heat. That's nice because you can adjust this depending on how you want the heat to flow.

It was recommended to add a duct to the stack to also change the flow but that seemed like overkill to me.

A Peoria big enough to do a small hog is probably going to run you $3-4k minimum.

And I'll expect an invitation.
