I wouldn't do rare unless it was a very reputable burger place.

Depends on how you define good red meat. "Tender steak" is often equated as a great red meat, but those cuts don't have the same richness of flavor you can from a cut that has fat. I like mostly braised beef or ground beef. Neck, short rib (favorite), pot roast, burgers, meat loafs, salisbury steak. I'm mostly a comfort food person. The most steaky or roasty I can go is a hanger steak and occasional flank steak. Anything else is too salty, chewy, or not flavorful enough. I find those meals boring and pretentious.

Yeah, a good rule of thumb is the cheaper the meat and/or shittier the place the more well done you should want it and vice versa.

Unless it's sloppy joe, pot roast, meat loaf, corned beef, Salisbury steak...it should never be more than medium rare.

A good cut of steak or good ground beef doesn't really need more than salt and pepper.

One alternate seasoning that is incredible is to take a ribeye and rub both sides with plenty of your favorite bbq rub and Montreal steak seasoning...then grill to just past rare.

I'm with Spaulding on this one...you can certainly cook a burger well done and have it be very juicy and flavorful. It's how the meat is packed/formed (should be as loose as possible while still keeping the patty together), as well as the fat content (approx. 80/20). You want as much Maillard reaction/carmelization as possible.

If she likes the burger, then you can try the steak. To be honest, as much as I love a great steak, a great burger can be just as good.

If she ends up going vegan and you have to cook on her terms, you can't go wrong with curry as a vegan dish. Use cauliflower, celery, and chickpeas along with some diced potatoes, serve over brown rice or quinoa. There are lots of sauces to go with but I like vindaloo and madras the best. Even with those premade sauces, I end up supplementing them with chili powder and red pepper flakes for more heat. I'm going to work on making a sauce from scratch one of these days.
