Anyone have a go-to place for chilaquiles? Any good restaurants in the 'burbs that serve 'em up? I wish more places offered it.

Had some at Cindy's over the weekend. A bit pricey, but a massive amount and delicious. They lasted over three breakfasts. Cashed them today.

I remember the old diner that was there, too. No complaints. The real triumph of Bryn Mawr is in the menu, more than the execution (which is nearly flawless.) It's a well-concieved balance of sweet to tart, hispanic to non-hispanic. The specials are informed by what's in season, the cheeses are right for the savory items. I guess it's somewhat daring or high end for breakfast, but not really. If your mind puts those kind of balances together with food, it just makes so much sense. There's a lot of "Why didn't I think of that" moments. Chilaquile portions aren't huge, but you don't leave hungry.

Yeah, I get that he's trying to elevate breakfast, I guess I just like my breakfast more straight forward. And if I'm going Mexican, I usually hit a Clark Street taqueria. I'm not a huge fan of M. Henry either. If I'm going for "fancy" breakfast, I probably like Big Jones as well as any.

ok i was gonna make a post about that show, but haven't because i keep forgetting.

I know most reality tv is fake right but this show is infuriating.

Your signature dish is who you are. its what gave you your name allegedly. you challenge bobby flay who in many cases isn't super sure what that even is and he wipes the floor with them and they are like oh its ok. NO ITS NOT OK YOU SHOULD BE EMBARRASSED YOU ARE EMBARASSING BE ANGRIER

that said i love it and bobby flay is simply amazing. he doesn't typically care about what the dish is he's supposed to cook he just knows that flavor is key.

I took a shot at these a few weeks ago.

Jewel has had some HOT salsa verde on sale, 2 for $5 recently, so I went with that. It is fantastic.

I spread a bunch of tortilla chips in a pyrex baking dish, doused them with the salsa, covered with plenty of shredded cheese and baked it until cheese melted and chips were soft.

Dropped some scrambled or poached eggs on top and that was it.

I'm sure rotisserie chicken shredded in it would be great as well.

My homemade tasted as good or better than anything my wife has had at a restaurant...and she's a true aficionado.

It's incredibly easy to make. Just make sure you find the right salsa for you. Or make your own.

Here's my take:

Fry up some chorizo and diced onions in a nonstick pan.
Once it's close to done, add in some donkey chips or similar (don't use wimpy chips...you want them to get soft but not mushy).
Add in some salsa and saute until the chips are soft and coated with the chorizo and salsa.
Add in scrambled eggs and cook until eggs are set.
Sprinkle on cheese and serve with sour cream/guac etc.
