No one will believe that nonsense. I don't really think it's you, though. It reeks of Kirkwood.

For real? I figured that would lessen flavor, but I don't know what I'm talking about.

It seals in the flavor/juices.

Browning is all about flavor. The Maillard reaction is your friend.

The searing in flavor and juices part is a myth. The act of browning food is going to actually dry out the meat more. The trick is to do high enough heat where you can quickly achieve the desired level of browning and then switch over to the slower cooking method that will cook the meat through while retaining more moisture.

Lipid's got it right top to bottom.

Taking that one step further, if you're doing a steak in the oven, don't be a fool and sear it first ... do it last.

Bake, remove, rest for 10 minutes, sear each side one minute as hot and high as you can possibly make that skillet, and the bonus then being you can eat it immediately since you already let it rest.

Sounds like good material for a thread that isn't specifically about not using an oven, Mr. French Laundry.

You guys have any tips (yes you do but not that one) or secrets? Do you brown or sear stuff or preheat it before putting it in? Whenever I make meals in a crock pot it tastes boiled or something. Other people make great stuff but mine doesn't seem right. I have a cheap one, is that the problem?

Do not add a lot of liquid especially if you are adding veggies. they will add it as the cooking goes along. Always try to cook slow,High will tend to do that funky flavor thing.

I've never owned or even seen a slow cooker in person, but I'd like to get one. Looking online they seem to come in the $30 range or the $120 range. Also different sizes.

What would you recommend? Should you get one of the more expensive ones or does the $30 do the job just as well? Also, what about the quart capacity?

You will want to get at least a 6 quart. Nobody makes a little amount of food in a slow cooker. Price wise I'd lean middle of the road.

Definitely 6 quart.

The $30-40 works just fine.

Make sure it fits in your dishwasher. I got a six quart one at first but my dishwasher is too small and the damn pot wouldn't fit in any of the corners because it was oval. So I ended up getting a cheaper 4-quart one instead without any fancy display or options beyond high/low/off.

This cannot be true.

I'm sure I've been in the room with one, but have never noticed. Definitely never eaten any food that came out of a slow cooker. But hoping to change that very soon. It sounds really easy.

Of all the things you've ever written here, that's the one you choose to preface with "not to be a jackass"?

Liner? They make liners? can you just leave the leftovers in the bag and put them in the fridge? that sounds genius!

Yes, they make liners. My wife uses them for this cheese thing she makes.

I'll never use a liner and I would never put the crockpot in the dishwasher. That is all soft bullshit. You have to deal with the mess like a man.... by letting it soak overnight and hoping your wife washes it in the morning.

Awesome tonight and will make solid leftovers for lunch tomorrow. My wife used chicken breasts. The pineapple is a nice touch. The chicken was perfectly juicy and tender. Great call Ed.

She used Open Pit on the theory that other ones would be too sweet with the pineapple. Despite the low quality sauce, it turned out fine. Do you have a favorite sauce that works best?

I love Open Pit!

I have broadened my BBQ sauce horizons. Sweet Baby Ray's has a sweet and spicy sauce that's my current favorite. It's personal preference.

Open Pit on its own is a pretty crappy sauce, but it does seem to work well in the crockpot. I have also had great success using it as a marinade for chicken breasts or a pork tenderloin overnite.
