Taco soup yesterday. Wife made a non slo cooker chicken thing we do with penne pasta cream chicken and shroom soup mixed veg with white meat chix cause no one likes dark meat.

Franky, I put chicken breasts in the crock pot with some taco seasoning, finely chopped peppers & onions, a cup of chicken broth, and a bit of oil. Cooked them on slow for about 4 hours, shredded, then cooked another hour or so. They were very good.

I had intended to grill the chicken, but I didn't feel like dodging raindrops so I opted for the above method.

Saw a bottle of Jamaican jerk sauce on the clearance rack for a dollar, so it was off to the slow races for me. Poured the whole bottle over some chicken thighs, augmented it with some paprika, onions, black pepper, cloves, garlic, and a little habanero sauce. Gave that seven hours and then made some black beans and rice with chicken broth, celery, carrots, more onion, and half a can of diced tomatoes with jalapenos (other half went in the slow cooker). Got four meals out of it, delicious.

I been using the Insta Pot lot more than the slow cooker. Don't know if it is because it is new or just quicker. I made some good stuff. Next up is pulled pork.

If you don't mind preparing a few times over a three day weekend, I followed this recipe for Tonkotsu Ramen:

A few things I did differently. I know hocks are probably the best for broth, but I just picked up pork neck bones from Mariano's. Were a lot cheaper than a butcher and the broth was still great. I also did a full 24 hours and not the 18 in the recipe. That really broke the bone down. Also some of the spices were hard to find, so I did end up with a different miso I found at The Fresh Market. The pork belly is really the key to tie everything together.

Made ribs in my slow cooker for the first time yesterday and they were fantastic. 15 minutes on in each side in the oven and then 8 hours in the slow cooker. I want to experiment with different rubs in the future but it was a great start. The entire family agreed.

I’ve been instantpotting an Italian beef pot roast for a while. I get the twin pack of roasts from Sams so about 5 pounds of meat. Dump in a jar of pepperoncinis peppers and let it go for about 2 and a half hours.

Meat comes out completely shreadable and great flavor.

This convinced me to buy some Louie's italian beef seasoning mix and pepperoncinis, bottom round and some giardiniera...will probably do this on Wednesday.

Did pulled pork in the instapot last night. Used it for Tacos. wow turned out awesome. I used Sweet Baby Ray Bourbon and brown sugar. took about 1 1/2 hour from start to finish.

Dashes or more of salt, pepper, paprika, nutmeg, red pepper flakes
2 dark chocolate squares

Browned the meat and combined all ingredients last night, and just got the crockpot going now. Should be good for a few days, and smaller containers will easily freeze for lunches down the road.

I make a lot of crock pot turkey chili. Got a tip for you that was in my recipe. Put 1 can of the beans in a blender and puree, then add it to the chili. Thickens the chili and gives it good flavor. i do it with both cans of beans rather than just one as I really don't love the texture beans bring to chili.

I like the beans, but I hear ya, Shakes. MANY get turned off by the beans in a batch of chili. That's a pretty good suggestion.
