Hosted our first Hannukah party at our new house with my parents and my brother's family. I cooked latkes for the first time. They turned out amazing. You know it's good when you have a line of people waiting on the last batch.

The problem is how bad my house smells now. Also, one of my puppies does not like any smell of smokiness coming from the kitchen. He freaks out and last night was really bad. He ran and hid by the couch the whole night.


I saw some people actually cook then outside because of this. I'm gonna start doing that next year. Gonna get an electric single burner and set up in my garage next year.

But, damn were they good. The key is after you wring out the moisture from the potatoes into a bowl, you save the starch that collects at the bottom and incorporate that back in. That helps make them really crispy. Also, I cooked them in half vegetable oil and half chicken schmaltz. They were golden crispy on the outside and creamy on the inside.
