Yesterday, I braised a 7 lb pork shoulder in my cast iron dutch oven for three and a half hours at 300. The braising liquid was lime juice, orange juice, onions, jalapenos (seeds and rib removed), garlic, chili powder, a cinnamon stick, and some water. After 3.5 hours, I shredded the meat with two forks, and placed it into the sheet pan. The liquid was strained and poured over the meat, which went back into the oven for 30 minutes at 375.

This was the final product:

Very nice. How much was pork shoulder per pound?

Looks really good Chus. How did it taste and what all did you wrap it with into your tacos or burritos? And at the risk of seconding the asshat I was going to ask about the kiss.

A York peppermint patty would really seal the deal.

The only way Chus can correct this is to pour a bunch of milk and sugar on top.

Chus can throw down. The man has a way with meat.

Corn tortillas, with onions and cilantro.

After twenty minutes in the oven, the outside was crispy. I flipped the meat around, and threw it back in for ten more minutes. I think I just added too much liquid.

Yesterday there were some yummy donuts hanging out of the dumpster at Dunkin so I took them. I'd rather have the pork.

If I were the Guy Fieri mult I would be saying you make it like Chus did and finish it on the flat top. Flavor town.

those aren't carnitas.

I'd put that in the pulled pork family, not the carnitas family.
