We don’t have any good local Italian beef places out in AZ but very thankful Portillo’s finally came here in 2013 (a couple miles down the street from Sloan park). The aju we made at the pizza place I managed is pretty good but not as good as Portillo’s. We only used 4 simple ingredients: salt, pepper, oregano, and granulated garlic. I’ve started to experiment at home. What makes Portillo’s juice so good?

Pick up, or look up, a package of Wishbone Italian seasoning, dry. I'm sure whatever Portillo's is using is proprietary, but a lot of decent beef places use this as their secret au jus seasoning. A random joint is not going to be sitting on 14 5 gallon jugs of spices. At the very least, look at the ingredients, you might find what you are missing.
