Bacon weave

Wrapped breast

Alton Brown's turkey brine recipe (I brined the breast and a turkey together in a 5 gallon bucket)

Ingredients
For the brine:
1 cup kosher salt.
1/2 cup light brown sugar.
1 gallon vegetable stock.
1 tablespoon black peppercorns.
1 1/2 teaspoons allspice berries.
1 1/2 teaspoons chopped candied ginger.
1 gallon heavily iced water.

I also dropped in a couple bay leaves.

I sprinkled Memphis Dust all over the bacon wrapped breast before setting on the smoker.

Put on a couple chunks of cherry and smoked it at around 300 for about 4 hours. I didn't add any more wood besides the first chunks.

After about an hour, cover with foil to avoid scorching the bacon.

Pretty well! Improvised an agrodolce with balsamic vinegar, brown sugar, and lemon juice, tossed the sprouts in that and roasted them, they went over well. Everything turned out, I was happy with it.

Just a warning and it would never be true in my book but some have told me the bacon weave is overload. I didn't do a turkey but a meatloaf. I think you just have to be careful of the salt content of any additional rub/spice you add.

Bacon is never an overload.

We've been draping the turkey with a bacon mat for the past few years, turns out great.

The only think I think it would really affect is how you make the gravy.

Coating the bacon wrapped breast in Memphis Dust isn't a concern. The rub contains no salt.

MEMPHIS DUST:
Ingredients
3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1/2 cup American paprika
1/4 cup garlic powder
2 tablespoons ground black pepper
2 tablespoons ground ginger powder
2 tablespoons onion powder
2 teaspoons rosemary powder

And you can always keep a couple packets of the instant gravy on hand just in case. It's certainly not the best, but it beats having no gravy at all.

My buddy had a 5 gallon bucket of turkey stock in his walk-in fridge. We used that for a sauce and the stuffing. I've been spoiled the past few years.

that's not a good excuse since ham is also an inferior meat. If you wanted to use that excuse then just go ahead and make steaks or some other quality tasting meat. Don't settle on ham which sucks.

lol. its a 5 gallon pickle bucket from chick fil a. I have about 20 of them. Just call your local chick fil a and they'll give you all that you need. My garage basically smells like pickles for weeks after I get them.
