I’ve tried the reverse sear several times. I prefer the original sear. Maybe it’s stubbornness but I know which result I prefer.

Smoked strip steak finished with a reverse sear is devine. Seriously you need to try it. It comes out perfect every time, guests love it and the best part is...it’s easy and doesn’t take all day.

I haven’t tried smoking it and searing it. I’ll give it a whirl. I still feel like I have my current method down pat after some trials and errors but that sounds interesting

I've found that when cooking pretty much any protein, it's best to add salt AFTER you've cooked it, not before.
Especially eggs. I'm sure there's a scientific reason but all I know is that it actually does make a difference.
I'd also recommend checking out Binging With Babish on YouTube.
He's got a lot of niche videos, but I think there's also a section on his channel called "Basics With Babish" that you could learn a lot from.

I have found that if you keep the eggs to no more or less than a quarter of an inch high in the pan it usually works out well. If you go above that they seem to burn or turn to mush regardless of how you regulate the temp. Put finely shredded cheddar in while they are just about half done. If you aren't putting cheese in your eggs then they are going to fucking suck regardless.

Chinese Fried Rice.

I have tried to make this over the years, but can't get it like the Chinese. You need to use both light and dark soy sauce, and it matters what soy sauce you use. Cheap soy sauces like Kikoman are no good. You also have to use a little rice wine. Maybe I'm missing oyster sauce. I think the Chinese chefs use a type of cooking oil/wok oil that is flavored. They do use a little sesame oil at the end.
