Hmmm. I'm sure I'll have questions in the future. How much practice does it take to get good at it?

Back in another life--before I had kids--I used to bake bread religiously.

If you want to get serious about it, you should definitely grow your own starter. I'd also recommend picking up Nancy Silverton's Breads from La Brea Bakery, which served as my bread-baking bible when I was learning the craft. With a starter and that book, you can bake excellent bread on your first try.

I have a starter with a partner...I don't know how that's going to go. I might start my own for a backup. It makes me nervous when I don't know what I'm doing.

start with a basic yeast bread to get some experience handling dough, rising, shaping, baking etc. Sourdough adds a bunch of variables which complicate things immensely.
