Took a flyer on the Famous Dave's Natural Sweet from Costco. It's really good.

At lunch today chopped and warmed up some of the point off the brisket i smoked Saturday. Added some of that Dave's sauce. It was some of the best burnt ends ive ever had.

HUGE fan of their rib rub.

There's some brand of potato chips/corn chips that they sell in St Louis/MO that they don't sell up here.

The brand name escapes me.

I’m appreciative of all the suggestions and genuinely going to try as many of these as I can find. I expected the guy fieri mult to go with an all caps donkey sauce and nuke the thread before it got going.

If anybody is near a city bbq in the burbs, the brush fire sauce is pretty solid for chicken.

Here's what i have been making, it's Meathead's Memphis Dust


3/4 cup firmly packed dark brown sugar

3/4 cup white sugar

1/2 cup American paprika (I use smoked paprika)

1/4 cup garlic powder

2 tablespoons ground black pepper

2 tablespoons ground ginger powder

2 tablespoons onion powder

2 teaspoons rosemary powder (hard to find, so i elimimate it)

I add a teaspoon or so of allspice. It just smelled like it belonged.


Notice it contains no salt.

The salt is added before the rub.

Let me clarify, i use the Memphis Dust on pork.

For the brisket, i used the Big Bad Beef Rub with a dry brine the night before.

3 tablespoon coarsely ground black pepper

1 tablespoon granulated white sugar

1 tablespoon onion powder

2 teaspoons mustard powder

2 teaspoons garlic powder

2 teaspoons American chili or ancho powder

1 teaspoon chipotle or cayenne powder

Best place I ever ate at in St Louis makes fresh cut fries with those chips ground up, and sprinkled over the top as a seasoning. To go along with a really, really good burger. Dive kinda place.

This is my favorite one. Pretty easy. Just cook it on low and stir every so often for 5 minutes until everything combines.
