I like them both, but I feel like the fluffier kind is an easier sell to people because it is "light." But one of my favorites I ever had was dense as hell with caramel swirl in it and Oreo crust and was phenomenal. So in summary, I did not help you much with your question, and I apologize. :)

I like my cheesecake like a like my men, heavy and dense.

I used to make an awesome cheesecake but I haven't baked in a long time. My Bailey's cheesecake would cause foodgasms.

The fluffy version is like polish cheesecake, which sucks.

I'm not any kind of baking expert, but cheesecake is one thing I have been able to make successfully. Credit to my wife, as she found and mastered the recipe first.

A standard cheesecake is not that difficult and it's a pretty basic recipe. Biggest thing is it gets baked in water bath and the spring pan needs to be carefully lined in heavy duty thick aluminum foil. Cream Cheese, Eggs, pinch of salt, sugar, and vanilla....it's very simple.

Light and fluffy? meh...JORR is accurate. NY style cheesecake is rich and thick. Any of the "no-bake" cheesecakes are glorified pudding and don't count.

Then I saw them pull the bodies up, bring them in and take them on a stretcher across the huge beach (not wide but long). Even then, as I saw the body under the white sheet, I couldn't believe it was real until I saw a family member crying.

This is the one we based ours from. Our oven isn't the best, so we bake the cheesecake itself for 80 minutes and we double up the crust ingredients. I've swapped graham crackers for oreo crumbs in the same way (maybe less sugar) and it's even better.
