Here's a pro tip.

Make your Corned Beef as you normally would.

When it's finished, slice into 3/4" strips.

Place on hot grill for a couple minutes each side. Long enough to create grill marks and cause the fats to melt and sizzle up.

Best CB you will have ever had.

our new butcher did not get my directions in giving me full beef ribs, not cut into short ribs. but i worked with what i had.

haha. what i did notice saturday was the number of people saying they were smoking their corned beef for st patricks day.

smoked corned beef is essentially pastrami. which is Turkish not Irish. pretty snobby of me though.
