Mrs BigW72 bought me a Blackstone griddle.....that's an awful lot of bacon to cook all at onc....W00T.

Our first meal was beef and chicken fajitas....delicious.

Finally got a chance to use my new Char-Grill induction grill (propane as required by the HOA). Nothing fancy, just some Hebrew National hot dogs and a 14 oz strip steak. I picked up some 20 oz strips from Costco, and I will try reverse searing it over the weekend. I need to get a better handle on heat control when cooking indirect.

I also bought 10# of chicken thighs from Costco in six bags, so I'm going to have to get my marinating game on.

I need one. In the oven, I usually go with one of the bottled Indian ones from Trader Joe's. I don't think that will translate to the grill, those are more of a sautee.

I'm thinking something Jamaican in influence that will go well with a little bit of rice as leftovers. I have a small container of Penzeys Jerk spice mix, whuch starts with ginger, ancho, and brown sugar.

No....a good friend of mine has had one for 2 summers. If you take care of it by following some simple instructions on seasoning and keeping it oiled, it's fine. Like any other grill, keeping it covered is just as important.

One think to note as you will go through more propane / gas on this thing than a regular grill, but not an issue for me as I have my grill and blackstone running on Natural Gas. I will never understand why people insist on wasting their time and money on propane.

my blackstone is a year old and will need to be reseasoned after this year. But in truth my wife seasoned it the first time and didn't do a great job.

but after i use it scrape it clean then sprits it with canola or bacon grease and cover it up.

The first time I grilled one I used Too many coals and the grill was way too hot. The bottom was pretty charred.

The second time I used less charcoal and indirect heat and came out great.
