Although I am a fan of making food that takes an hour or longer to put together for family functions, sometimes I just want to feed the family something quick, and something other than frozen pizza or Boston Market takeout. Thought maybe we could have a thread for "throw it together" types of dishes that taste good but don't take a long time to prepare. The only rule is no pasta salads allowed in this thread.

Here's one I made the other day -- boneless, skinless chicken thighs, panko bread crumbs, packet of Lipton onion soup mix, an egg, some mustard. Put bread crumbs and onion mix in one bowl and combine. Broke the egg into another bowl and added about 2T of mustard, then whipped that up. Cut the thighs in half, dipped in the mustard/egg, then coated in the panko, then on non-stick foil lined baking pan and in the 350 degree oven for 20 mins. Not bad at all -- don't really need to salt and pepper because the seasoning in the soup mix takes care of that.

Lazy/Cheaters Lasagna aka baked ravioli:
Preheat 425
Boil water and cook 1-1.5 lb frozen cheese (or whatever) ravioli (only until floating/about 5 min)
drain ravioli over 4-5 cups fresh spinach (this wilts the spinach, thereby saving another step)
mix 1/2-3/4 jar pasta sauce with sliced sundried tom, sliced roasted rep pepper, sliced cooked sausage,, or whatever. mix pasta and spinach with sauce.
Mix 1-2 cups shredded mozzarella or pizza cheese with grated parm or fresh mozz, or whatever
in a pie dish or 8x8, put down one layer of ravioli/ sauce, then cheese, then repeat, going heavier on the top layer of cheese.
Bake about 12-15 min

Got to a grocery store with a salad bar, get the biggest container, fill it with sliced onion, green onions, shrooms, peppers, celery, buy some shrimp as well...

Toss the veggies in a huge pot with some olive oil and some cajun seasoning. Maybe 20-30 minutes, let them break downm stir every once in a while, then toss in a bunch of shrimp for 5 minutes...Jambalaya...the LAzy kind...but it is so damn good.

You can toss in Chicken broth and rice as well, if you want that, but the ease then become a dish. lol

The beauty of the whole thing is the pre sliced Veggies from the Salad bar. Making it LAZY

Whole Foods cost me $7.50 for the large container. Probably equal to 2 peppers, 1 onion, 1 box shrooms, 1 celery which if I bought alone has to be = $7.50. It is a start move!

That's a pretty good shortcut... Plus it saves the trouble of buying $1.50 of celery, using 25 cents for a recipe, and then throwing away the other $1.25 after it has wilted because nobody will eat it.

Get chicken tenderloins, or get regular chicken breasts and cut into 1-2" pieces.

Get a box of Rice-A-Roni or generic. Brown the rice according to the directions. Pour in water, seasoning, and stir in the raw chicken. Bring to boil, then turn down heat and let simmer for 18-20min. During the last 5 minutes, you can add raw veggies or a can of veggies.

We do that a couple of times a month at home because its quick and perfect for 2 people. Make a double batch and you've got more than enough for a family of 4 or 5. We do tacos at home alot too.

This is actually a great recipe that just happens to be quick--I typically use more sausage and cream than called for below. Everybody loves this.

Farfalle with Sausage, Tomatoes, and Cream


Yield: Makes 6 servings
Active Time: 30 minutes
Total Time: 30 minutes
ingredients

2 tablespoons olive oil
1 pound sweet Italian sausages, casings removed
1/2 teaspoon dried crushed red pepper
1 cup chopped onion
3 garlic cloves, minced
1 28-ounce can crushed tomatoes with added puree
1/2 cup whipping cream


1 pound farfalle (bow-tie pasta)
1/2 cup (packed) chopped fresh basil
Freshly grated Pecorino Romano cheese

preparation

Heat oil in heavy large skillet over medium-high heat. Add sausage and crushed red pepper. Sauté until sausage is no longer pink, breaking up with back of fork, about 5 minutes. Add onion and garlic; sauté until onion is tender and sausage is browned, about 3 minutes longer. Add tomatoes and cream. Reduce heat to low and simmer until sausage mixture thickens, about 3 minutes. Season to taste with salt and pepper.

Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup cooking liquid. Return pasta to same pot. Add sausage mixture and toss over medium-low heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is

Another real one I did tonight was about 1 T of brown sugar, 1 T of mirin, 1 t of rice wine vinegar, and 1 1/2 T of soy. Mix until the brown sugar is mostly dissolved and then throw some cuts of salmon in there. While that is going, start up some rice. Once you are done with the rice and have that cooking, lay out some spears of asparagus and coat with sesame oil and some soy... mix the spears around until well coated, and throw in a 425 degree oven and set the timer for twenty minutes. At 10 minutes to go, heat up some sesame oil in a pan and after about a minute, throw your salmon in there, skin side down, for four minutes, then flip for another four. I also pour the marinade in and let it make a sauce. Now your rice is done, so scoop that on a plate, put a salmon piece on top, and grab some of the cooking liquid to pour over that (just a spoonful will do.) Then the asparagus is done, so pull that out and boom, dinner is ready.

another easy salmon one i've done (think its a Giada DeLaurentis recipe or however you spell her name)
basically you make a little mix with a chopped tomato, chopped shallot, lemon juice, oregano and basil, s&p
season the salmon, put it in foil and top with the mix, put some asparagus in there too and bake for ~20 min.

i much prefer salmon on the grill but this one is pretty fresh tasting and definitely far easier as you basically dump everything in the foil and bake, no clean up either

Cup of mayo, 1/2 cup of parm cheese mixed together
throw some chicken breasts in a baking dish
cover the chicken with the mayo mixture
sprinkle italian breadcrumbs on top
bake for ~25 mins at 350

Looks fucking disgusting when it goes in the oven but then the mayo cooks down and gets all greasy and the chicken is juicy and delicious. You can also line the baking dish with parchment paper and really go lazy and not have to scrub the dish.

I almost always line my dishes now, not obsessively covering every square inch, but covering the bulk of it, so if anything gets baked on it gets quickly tossed, and you more or less just have to rinse off the dish you cooked on. Big time saver.

Box from your favorite brand of Mac N Cheese.
1 medium Jalapeno (y mas optional) seeded and finely diced
1 - 2 cans of tuna in water, drained

-boil water, cook noodles for minimum amount of directions time, about 5-6 minutes
-put half recipe of butter back in hot pan and add diced jalapenos. Cook for about 2 minutes
add tuna to pot and cook hot for another 2 minutes
-re-introduce pasta to pot. Hello pot
-add rest of butter (plus 1 tbsp more than recipe)
-add cheese and milk (I add about 1/4 cup more milk as the tuna absorbs it)

stir, turn down heat and place lid on top, stir again, then again for 2-3 minutes or until noodles are covered in sauce and hot.

1 box of rotini pasta = $1
1 tin of anchovies = $2
2 serrano or jalepeno peppers thinly sliced = $0.50
3-4 cloves of garlic chopped = $0.50
1 hunk of parmesan/romano cheese $3
1/2 can of tomato paste = $0.50

1. Heavily salt pasta water and boil for 7 minutes.
2. Save 2 cups of pasta water and drain pasta
3. Heat deep welled frying pan with a couple of tablespoons of olive oil
4. Add chopped garlic and peppers and fry for about 5 minutes
5. Add tin of anchovies and pour in a little bit of the olive oil from the tin and fry until fillets break apart
6. Add drained pasta to the pan and add a couple of spoonfuls of tomato paste then pour some of the reserved pasta water on top until paste is dissolved.
7. Cover and cook for 5 more minutes.
8. Grate cheese over top. Done.

It takes like 30 seconds to chop them man! That's less time then it would take to open the can of chilies.
