I don't know about you guys, but as the crisp autumn air sets in and portends the chill of winter, sometimes I just get this primitive urge to throw a bunch of foodstuffs in a large cooking vessel and expose it to high temperatures for a while. I know casserole has a bad reputation these days, kinda white-trashy, kinda Minnesotan Lutheran potluck, but I just want to make one and taste that warm, crispy taste of whatever. Any recommendations?

I love tuna. Jewel has good tuna in the deli. Makes a tasty sandwich with some hot Giardenara.

I've been doing tuna celery red and yellow peppers and about 5 olives from a Greek olive mix. Sometime olive oil if its too dry. People dig it.

Funny you mention this CH. I was just thinking of looking through my recipes this weekend. Last weekend I
bought a couple of cans of chili in anticipation of the colder weather coming. I also found your comment about
Minnestoan Lutherans humorous since that is exactly the stock I come from.

T-Bone -- here's a canned chili that tastes way better than a can.

2 cans diced tomatoes (if they have the kind with peppers and onions get it)
1 can black beans
2 cans kidney beans (your choice, dark, light, or mix em up)
1 decent sized can of chopped chilis (they have em in the Mexican section)
1 packet chili mix
1 lb beef

Brown the beef, drain off the fat. Throw beef in crockpot, open all cans and packets and dump in crockpot. Pour in a shot of beer or ginger ale if you like, set to low when you leave for work in the morning. When you come home, boom, chili. Of course, you can improve this recipe a lot, but it will taste a lot better than Hormel from a can.

i like the kind where you have turkey and cream of mushroom and broccoli in the bottom then croutons on top covered with cheddar cheese. bake at 350 for like a half hour and eat the whole thing

This is one of my favorites Ike except I use chicken and bread dipped in butter instread of croutons. I believe
my recipe also takes mayo.

want to make enough that I have to eat it for an entire week. I need bachelor portion sizes so I can eat it and

Chili freezes really well. Get a few of those throwaway ziplock plastic containers and put it in there once it has cooled and freeze it. You want to do that because it will stain.

It's a great quick meal as long as you plan at least 24 hours in advance.

Love to employ the crockpot during the cooler months for soups, stews, and chili. For chili, I always brown the meat and chop up and combine all the veggies the night before and let them sit in the fridge overnight, letting the flavors all mingle and get to know one another. Next morning, let them go in the crock pot for a couple hours.

Last week I cooked a small whole chicken in there. Put a can of chicken broth on the bottom, set chicken in, then wrap Idaho potatoes in foil, and let it cook on low for about 10 hours (or less if its done, I'm gone for about 10 hours for work). Then you come home and have a nice dinner of chicken and potatoes with no work.

That sounds good. Alternatively, you could do red potatoes cut in half or quarters and leave the foil out of it. Slow cooked red potatoes with skin are delicious.

Agreed, but they get very soggy in the crockpot for that long. The baked potatoes from the pot were great.

All of my grandmothers, aunts and Frank swear that there is no work involved in cooking a meal in a crock pot.


Cleaning a crock pot = worse than turning on the grill and grilling a chicken and some potatoes after work.
