So...winter is coming...which means chili is coming too (or is already here in this house at least).

What are your recipes? I'm always looking for way to mix things up a bit.

The batch I made today consisted of:

2 pounds ground beef
12 ounces pork chorizo
1 can (46 oz) tomato juice
1 can (14.5 oz I think) Mexican style diced tomatoes
1 can (same as above) Mexican style stewed tomatoes
1 can (6 oz) tomato paste
1 can (16 oz) red beans in chili sauce
Diced red roasted peppers
Diced jalapeno peppers
Two cloves garlic (or two of these cubes, which are crazy handy)
Salt, pepper, cinnamon, and chili powder to taste


Fry the chorizo until it's got some good color and throw in the slow cooker. Fry up the ground beef in the pan you just fried the chrizo in. Drain the excess fat from the beef and throw in the slow cooker. Add the juice, various tomato products, beans and peppers to the slow cooker. Season with the aforementioned seasonings to taste and let simmer on low for hours. It taste good after four or so hours...tastes even better after seven. Further simmering will provide diminishing returns (but returns nonetheless). I like to add the garlic maybe an hour or so before serving (because I'm weird like that).

If you are a person who likes to add crackers to your chili, I'd suggest you try some cornbread instead. I find it breaks up nicer into the chili and adds a little more flavor to the chili, whereas the crackers just seem to thicken the consistency while thinning out the flavor.

My friends dad until he passed due to cancer would make up chili for when we would come hang out during the winter. For years he would never tell us what his secret was. He made by far the best chili I have ever had. He finally broke down and told us about the peanut butter.

1 lb. ground beef
1 lb. ground pork
2 cans of chili beans
2 cans of diced tomatoes
2 bell peppers, chopped
1 small onion, chopped
1 small can of corn
6 ounces beer
3 cloves of garlic, chopped (I usually add a bit more, because fuck you, I love garlic)
1 bay leaf
my own homemade spice blend

1. Brown the meat, drain the fat, and add to stockpot.
2. Add tomatoes and corn (undrained), peppers, onion, garlic, beer, bay leaf, and spice mixture. Cook on medium heat, until it starts to boil.
3. Turn heat down to low, and add beans (undrained)
4. Remove the bay leaf, when you are ready to eat.

I will usually chop some jalapenos and raw onion, and shred some cheddar cheese as toppings.

However, I prefer Texas style - Chili with no beans.

Depending on how much you make, try adding a couple of Hershey's plain chocolate kisses to the batch of chili. I know it sounds weird like the peanut butter but a lot of people swear by a little chocolate in chili.

Never tried the peanut butter -- that's on the menu for this week at some point....

I have done and recommend chocolate. I also recommend if you are looking for a liquid, a little bit of ginger ale as an alternative to beer. It plays well with the flavors.

For other crazy things I have done in the past, one is cilantro, lime juice, chorizo, and sweet white corn for a mexican take... definitely needs cocoa powder to emulate a mole type sauce.

I also took my chili recipe and did ground lamb, cut the beans in half, threw in some frozen peas and carrot squares, and some small chunks of potato -- it was like a chili / shepard's pie stew.
