They use fresh grown tomatoes from their own crops, so next time you are aware of a tomato recall, you know Lou's has its own crops and you dont need to worry about which tomatoes they use.

I admit, I was expecting the worst from Lou's when I first gave it a real shot a couple weeks ago. I mean if the masses love it, it has to suck pretty bad. plus, how do you open 100 restaurants and maintain any sort of quality control? However, I was suitably impressed by my visit to the Oak Park outpost. Not amazing, but pretty damn good compared to the typical chain restaurant. I may even host my next book club there.

Lou's was way too built up for me the first time I tried it. It was good though.

I'm not a big fan of the restaurant as cult of personality. As an introvert I find such a relationship with my hot dog vendor or pizza maker exhausting. That's why I disliked Hot Doug's. There's an African restaurant in Lexington, Kentucky called Sav's Grill. If you're ever down there, the food is great. My friend Mamadou Savane runs it and he's like a Hot Doug of Central Kentucky. But really, I just want to eat. Sav is my friend but if I didn't know him I'd just want to be left alone to eat my goat stew. And that's the odd thing about Burt. His is a case of accidental cult of personality. Unlike Doug and Sav he didn't seek it out. It found him. He's an introvert himself and only the very reluctant object of zealous foodie fanboy attention.

Lous really isnt even a deep dish or stuffed, its more of a Pan pizza. Giordanos and Bacinos are deep dish pizzas and below the echelon of Lous, Genos, Unos and Dues (Originals Only)...

For the record, That Lous, Unos, dues, Genos relationship goes back a long long time...I think Lou worked at UNo and dues, then was going to work at Genos? Then they too the recipes and booted him out, so he went on his own...so it is essentially the same base recipe.

i've recently discovered marino's in EGV and it's an instant favorite. there's a local place i use regularly that trumps lou's, which is also nearby. but i've never had an issue with lou's--before i discovered the place, that was my regular pizza joint.

Once a year, usually in the dead of winter, before your quality big snow storm, I get the Nancy's delivered. A true stuffed pizza, takes a long time to cook, but have leftovers for 2-3 days...

Get a deep dish pizza, eat it for three meals in a row, also get a thin crust to chase that for two meals and then finish up the deep dish pizza. That is a good couple days.

Time of day, how busy is the place. Gotta ask for the well done pizza. Finding it at most places, I need to ask. They want to get your food out and money in the pocket ASAP, which i get, but want my cheese to have that golden brown going on.
