Well I am Polish and agree with Chus. It is funny when my kids were little they would not want to eat steak when their mom made it. She cooked it to death. They called my medium rare steaks juicy steaks.

I think it has plenty of flavor the way I eat it. I do not prefer steak but I really don't like the texture of soft meat or the sight of a bloody plate. The rationality of cooking it rare is meaningless to me.
