Tyler Florence is overlooked and underrated on TFN. 15 years ago it was a pretty good station now I probably watch the same amount of PBS. America's Test Kitchen, Nick Stellino, Rick Bayless are all good.

How does one properly cook a steak without putting grill marks on both sides?

I'd like one side of my steak mostly brown and a little dried out, the other side I'd like raw and slightly bloody.

If you flip in the same spot, the grill won't be as hot as when you first put it on. You need to find a fresh spot for the flip to get the good marks.

But, he was referring to the crossmarks on doing the 90 degree turn midway through the cook.

That works too. A couple weeks back, it was just too cold to fire up the charcoal grill, so I pan seared two ribeyes. It was glorious.

I have a Weber Genesis gas grill where the grates are two pieces. I think you can get a cast iron one to use as one half to sear and then finish on other side.
