Can't watch now ... short list:

Flair
Hogan (WWF)
Undertaker (I'll be kind enough to take both iterations)
Sandman (ECW)
RVD (ECW)
CM Punk (Cult of Personality)
Hogan (NWO)
Austin
Rock
HHH
Mr. McMahon
DX
Curt Henning (WCW ... Rap is Crap)
Storm/Credible (ECW)
Midnight Express
Sean Michaels (fun-bad)
Terry Funk ('Desperado')
Demon Finn Balor
The one time they had a live violinist for Nakamura
Val Venis

I'm sure there a several I'm missing and dozens of other good candidates.

My favorite Rock theme was the one with the obnoxiously long intro in 2003. It fit the Hollywood Rock gimmick so perfectly.

Ricky Steamboat, though some other guys did it a little better.

Arn Anderson had pretty cool music.

I agree with almost all of these. I think Brock Lesnar has had like 24 themes and they're all just generic dirnt-dirnt-dirnt wrestling metal. And the Corporation's music, which was the DX guy doing a rap song, never fit Vince McMahon, as funny as his walk down the ramp to it may have been. I wouldn't exactly say it captured the leitmotif. And Cena, I dunno, I guess it's a classic, but it's after my time. The rest, all classics.
