tried my second attempt at slow cooker this weekend, this time with a pot roast. Turned out half good, half ruined. Put the pot roast in the cooker after browning it and then filled it with the other ingredients. Noticed that only the bottom half of the pot roast was submerged in the liquid, didn't think anything of it. Recipe called for 6-8 hours so set it for 8. 8 hours later was surprised to discover that all the meat that had been submerged turned out great, whereas all the meat from the top half of the roast was dried out and completely inedible.

Is that normal for slow cookers? I'm thinking that in the future i should cut the roast in half and lay it flat and fully covered in the liquid.

Also, the 8 hours was little too long. I wanted to check it at 6 hours, but I'm not sure about taking the top off the slow cooker while its cooking...does that hurt the cooking process?

I tend to baste with the cooking liquid as it goes along. Did that when I made Italian Beef on Saturday. Keeps it moist. Also, it's ok to stir and turn the meat on occasion if you're making a full roast.

There is no issue taking the top off...it's not like making rice.

I'd say it depends on what you were going for with the pot roast.

If it's the traditional pot roast that I think most of us grew up on where you get big chunks of tender meat, I'd argue there are much better methods than a slow cooker (one of the reasons is the problem you came across). I'd say next time if that's what you want throw everything in a tightly sealed pouch of foil and throw it in the oven...Alton Brown has a really solid pot roast recipe using this method. Tender meat with that makings of a really good gravy.

That being said, you can absolutely make a delicious meal by throwing a pot roast in the slow cooker fully submerged in liquid...but my experience is anything that goes in the slow cooker for more than 6 hours winds up falling apart in the cooking process. Tossed with butter noodles and the aforementioned makes a killer beef and noodles recipe but it's not really pot roast, per se.

Definitely cut the meat into smaller pieces. If making pot roast, dump a can of beef broth in the pot.

Every time you open the lid, the pot cools down a little, so it will add time to the cooking process.

I believe you can substitute Castrol oil, if you don't have any castor oil available.

I agree with you... the difference is very noticable. The tricky part though is you cook it part way through, depressurize, then add your carrots and potatoes, and then cook the rest of the way.

Hah, yeah I was embarrassed when my wife used Open Pit on the first run, but they have all turned out good. The combination of chicken, pineapple, and any sauce sitting in a crock pot for that long just seems to work out nicely.

My wife just loves that you guys are foodies. She's like, at least those damn friends of yours are good for something.

Maybe I'm wrong but I'm guessing it's the other way around. Someone in the Heinz lab concocted a BBQ sauce and slapped the guy's name on it after he tasted it, thought "this sucks", saw the check, and said "this sucks...there isn't more!"
